Ingredients

  • 1 lb (450 g) fresh cheese tortellini cooked and drained
  • 8 oz (240 g) smoked salmon cut in strips
  • 2 green onions chopped
  • 2 tbsp (30 mL) capers
  • 1 tbsp (15 mL) chopped fresh dill
  • Pepper to taste
  • Lettuce leaves
  • Lemon quarters
  • Yogurt and Dill Dressing
  • 1/3 cup (80 mL) plain yogurt
  • 2 tbsp (30 mL) chopped fresh dill
  • 1 tbsp (15 mL) liquid honey
  • 2 tsp (10 mL) Dijon mustard
  • 1 garlic clove finely chopped
  • 1 tbsp (15 mL) lime juice
  • Pepper to taste

Preparation

In salad bowl, combine tortellini, smoked salmon, green onions, capers and fresh dill. Season to taste with pepper. Pour Yogurt and Dill Dressing over salad and toss lightly.

Line bottom of individual salad bowls with lettuce and top with generous portion of tortellini salad. Garnish with lemon quarters and serve.

Yogurt and Dill Dressing:

In bowl, mix all ingredients. Pepper to taste, cover and refrigerate for 1 hour.
