Smoked Trout on Potato Pancake

Ingredients

  • 3 oz (90 g) smoked trout
  • 8 leaves radicchio lettuce
  • 16 leaves lamb's lettuce
  • 4 small potatoes
  • 4 green onions chopped
  • 3 tbsp (45 mL) olive oil
  • 2 oz (60 g) Canadian Raclette or Migneron cheese
  • Shallot vinaigrette
  • 1/2 cup (125 mL) olive oil
  • 2 oz (60 g) minced shallots
  • Juice of 1 lemon
  • Salt and freshly ground pepper to taste

Preparation

In a small bowl, mix together the ingredients for the vinaigrette and set aside.

Peel and grate potatoes. Season with salt and pepper. To make a round pancake, take a small round frying pan and sauté potatoes in olive oil over medium-high heat, until golden brown on both sides. Repeat to make 4 pancakes.

Top pancakes with Canadian Raclette cheese and melt under grill for a few minutes.

Place pancakes on 4 plates. Surround with lamb's lettuce and radicchio lettuce. Place sliced smoked trout on potato pancakes and sprinkle with chopped green onion, then brush with the vinaigrette.
