
Smoked salmon & Brie eggs Benedict
1 tbsp (15 mL) butter
1 leek, rinsed well and thinly sliced
Salt and freshly ground pepper
3 tbsp (45 L) lemon juice
1 cup (250 mL) 15% cooking cream
1 tbsp (15 mL) fresh chives, chopped
1 1/2 tbsp (25 mL) fresh parsley, chopped
4 eggs
2 bagels
5 oz (150 g) smoked salmon
1 Pack (200 g) Canadian Brie, sliced
Fried leek greens:
3 cups (750 mL) canola oil
1 cup (250 mL) leeks, green sections only, julienned

Ingredients

Preparation
In a saucepan, melt butter on medium-high heat and cook leek for 2 min. Season with salt and pepper. Add lemon juice and reduce by half, about 2 min.
Pour cream into the saucepan while stirring. Lower heat to medium and let simmer, covered, for 10 min.
Make 4 large rectangles with plastic wrap. Place a quarter of the herbs in the centre of each rectangle. Season with salt and pepper. Carefully break an egg over herb centre. Bring four corners of the rectangle together over the egg and make a knot to seal. Repeat for remaining eggs.
Preheat oven to broil. Cut bagels in half, spread out on a baking sheet and toast in the oven. Turn off oven, remove bagels and top with smoked salmon and cheese. Return bagels to oven to keep warm while cooking eggs.
In a saucepan, bring 6 cups (1.5 L) of water to a boil. Lower heat to a simmer and add egg bundles. Cook eggs for about 4 min or until desired doneness. Remove from the saucepan using a slotted spoon.
Remove bagel halves from oven and place each on a plate. Drizzle with sauce. Carefully untie bundles and top each bagel half with an egg. Top with fried leek greens, if desired. Serve immediately.
Fried Leek greens
Heat oil in a saucepan on medium heat.
Fry leeks in hot oil until golden and crispy. Transfer to paper towel and let drain.
