Sizzling Shrimp in Sofrito

Ingredients

  • 3 tbsp (45 mL) olive oil
  • 2 tbsp (30 mL) butter
  • 2 cloves garlic minced
  • 24 large uncooked shrimp shelled and deveined
  • 1 chopped red onion
  • 2 red bell peppers
  • 1 green bell pepper
  • 3 medium tomatoes
  • 1 pinch of Cayenne pepper
  • 1/2 tsp (2.5 mL) paprika
  • 8 oz (250 g) Canadian Raclette cheese in small dice
  • 2 tbsp (30 mL) fresh coriander
  • Salt and freshly ground pepper to taste

Preparation

Cut onion in fairly thick slices. Cut sweet peppers in two, remove seeds, then cut into 1 cm wide strips. Remove seeds from tomatoes and chop.

In a deep frying pan, heat oil and butter. Sauté garlic, then add shrimp. Cook over high heat until coloured. Remove from pan and keep warm.

In the same pan, sauté onion and peppers over fairly high heat 5 minutes until tender. Add tomatoes, Cayenne pepper and paprika. Sauté 5 minutes or until tomatoes begin to turn into a purée.

Put shrimp back in pan, add diced Canadian Raclette cheese and sauté 1 minute. Add coriander, season with salt and pepper. May be served with saffron rice or Valencian rice.
