Scandinavian Pea Soup

4 1/2 cups (1.125 L) water
1 tsp (5 mL) salt
4 cups (1 L) chopped cooked ham, (approx. 1 lb/450 g)
1/2 cup (125 mL) chopped onion
1/2 cup (125 mL) grated carrot
2 cups (500 mL) Milk
A pinch of Cayenne pepper
A pinch of grated nutmeg

Yields: 8 to 10 servings

This hearty soup is almost a meal in itself and is an excellent way to warm up after a winter work-out.

Ingredients

1 1/2 cups (375 mL) yellow split peas
4 1/2 cups (1.125 L) water
1 tsp (5 mL) salt
4 cups (1 L) chopped cooked ham, (approx. 1 lb/450 g)
1/2 cup (125 mL) chopped onion
1/2 cup (125 mL) grated carrot
2 cups (500 mL) Milk
A pinch of Cayenne pepper
A pinch of grated nutmeg

Preparation

Wash peas; drain. Add water and salt to peas. Bring to the boil and boil 2 min. Remove from heat. Cover and let stand 1 hour. Do not drain water.

Add ham, onion and carrots to peas. Cover and simmer about 1-1/2 hours or until peas are tender. Stir in milk, cayenne and nutmeg to taste. Heat through and serve.
