Prairie Potato au Gratin

A variation on an old Swiss recipe, here's a classic that will likely become a wintertime favourite.

Ingredients

  • 2 lb (1 Kg) (about 6 cups/1.5 L) baking potatoes thinly sliced
  • 1 large onion finely chopped
  • 6 oz (180 g) cooked ham thinly sliced
  • 1 1/4 cups (310 mL) chicken broth
  • 2 tbsp (30 mL) all-purpose flour
  • 2 cups (500 mL) shredded Canadian Havarti cheese

Preparation

Layer half the potato slices and half the onion in a 8-cup (2 L) shallow rectangular baking dish. Sprinkle with salt and pepper.

Arrange ham slices evenly over potatoes. Top with a second layer of potatoes and onions. Sprinkle with salt and pepper.

Smoothly combine chicken broth and flour. Cook and stir over medium-high heat until mixture boils and thickens. Pour over the potatoes and ham in baking dish. Sprinkle Canadian Havarti cheese evenly over surface.

Bake, uncovered, in 375 °F (190 °C) oven for 60 to 70 minutes or until the potatoes are tender and cheese is golden. Let stand for 5 minutes before cutting and serving.

Tips

See what's in your fridge, because you could replace the Havarti with Cheddar. And virtually any prepared meat could substitute for ham.
