Homemade Nachos and Cottage Cheese Dip

Oven-Baked Nachos:
1 egg white
1/2 tsp (2 mL) chili powder
1/4 tsp (1 mL) ground cumin
A pinch of garlic powder
Salt and freshly ground pepper, to taste
6 small whole wheat tortillas

Cottage Cheese Dip:
2 cups (500 mL) Canadian Cottage cheese
2 tbsp (30 mL) olive oil
1/4 cup (60 mL) fresh chives, chopped
1/4 cup (60 mL) fresh coriander (cilantro), chopped
Salt and freshly ground pepper, to taste

Ingredients


Oven-Baked Nachos:
1 egg white
1/2 tsp (2 mL) chili powder
1/4 tsp (1 mL) ground cumin
A pinch of garlic powder
Salt and freshly ground pepper, to taste
6 small whole wheat tortillas

Cottage Cheese Dip:
2 cups (500 mL) Canadian Cottage cheese
2 tbsp (30 mL) olive oil
1/4 cup (60 mL) fresh chives, chopped
1/4 cup (60 mL) fresh coriander (cilantro), chopped
Salt and freshly ground pepper, to taste

Preparation

Preheat oven to 425 °F (220 °C).

In a bowl, mix egg white with spices. Brush tortillas with egg mixture, cut them into slices and place them on a baking sheet lined with parchment paper. Bake in the oven for 5–7 minutes or until tortilla slices are as crispy and golden as chips.

Meanwhile, place Cottage cheese in a bowl, sprinkle with olive oil and fresh herbs, and season with salt and pepper.

Place nachos in a bowl and serve with Cottage Cheese Dip.

Tips

Dip can also be puréed to obtain a smooth texture.

Cheese alternatives: Canadian Ricotta, Bocconcini.
