Fresh Sage, Sundried Tomato and Asiago Cheese Sauce

Reducing whipping cream with flavourful ingredients is a wonderfully simple way to make an unbeatable sauce. The fresh tastes of sage and sundried tomatoes brighten this sauce up to make a summery compliment for pasta, grilled chicken or pork.

Yields 1 cup / 250 mL

Ingredients

  • 1 cup (250 mL) 35 % cream
  • 1/3 cup (80 mL) finely chopped sundried tomatoes
  • 1 tbsp (15 mL) chopped fresh sage
  • 1/3 cup (80 mL) shredded Asiago cheese
  • A pinch of cayenne pepper
  • A pinch of ground nutmeg
  • Salt and pepper to taste

Preparation

Combine cream, sundried tomatoes and sage in a small saucepan. Simmer over medium heat until reduced to a sauce-like consistency, about 10 minutes. Remove from heat and let sit, covered, for an additional 10 minutes to further soften the sun dried tomatoes.

Return to medium heat until hot; remove from heat and stir in cheese. Season with cayenne, nutmeg, salt and pepper to taste.
