Cheesy Mini Pizzas with Anchovy Butter

Ingredients

  • 30 quarters of pita or mini pitas or 8 slices of lightly toasted bread cut in 4
  • 2 tomatoes chopped
  • 1 green bell pepper chopped
  • 1 onion chopped
  • 10 pitted black olives chopped
  • 2 cups (500 mL) grated Canadian Mozzarella cheese
  • Anchovy butter
  • 1/2 cup (125 mL) softened unsalted butter
  • 2 tbsp (30 mL) finely chopped anchovies
  • Juice of 1 lemon
  • Pepper to taste
  • A few pinches of dried thyme

Preparation

Preheat oven to 400 °F (200 °C).

Spread pita quarters, or bread, with Anchovy butter. Sprinkle with chopped tomatoes, bell pepper, onion and olives. Top with Canadian Mozzarella cheese and place in baking sheet. Bake for 8 to 10 minutes, or until cheese is golden. Remove from oven and serve.

Anchovy butter:

In bowl, whip all ingredients together, until smooth. Season to taste with pepper and thyme. Mix well. Refrigerate.
