Caramel Apple Casserole

Ingredients

  • 4 Spartan or other cooking apples peeled, cored and thickly sliced
  • 1 1/4 cups (310 mL) brown sugar lightly packed
  • 1 tbsp (15 mL) ground cinnamon
  • 3/4 cup (180 mL) melted butter
  • 2 tbsp (30 mL) Realemon lemon juice or fresh lemon juice
  • Batter
  • 1 cup (250 mL) all-purpose flour
  • 1 cup (250 mL) whole wheat flour
  • 2 tbsp (30 mL) brown sugar
  • 1 tbsp (15 mL) baking powder
  • 1/2 cup (125 mL) cold cubed butter
  • 2 eggs
  • 1/2 cup (125 mL) Milk
  • 1 cup (250 mL) shredded Canadian Cheddar cheese (optional)

Preparation

Preheat oven to 350 °F (180 °C). Butter a 9-inch (23 cm) square or 7 x 11-inch (18 x 28 cm) baking dish.

Toss apples with brown sugar, cinnamon, butter and lemon juice.

Batter:

Combine flours, brown sugar and baking powder in a food processor. Add butter and pulse until mixture resembles oatmeal. Whisk eggs with milk and, with motor running, add to flour mixture. Mix just until combined.

Drop half the batter by spoonfuls into the prepared dish. Spoon in apples. Drop dollops of remaining batter over the apples. Bake for 40 minutes or until apples are tender and topping is bubbly. Immediately sprinkle with Canadian Cheddar cheese, if using.

Serve warm.
