Ingredients

  • 4 veal cutlets
  • 4 oz (125 g) butter
  • 3 tbsp (45 mL) olive oil
  • 2 oz (60 g) Canadian Brie*
  • 2 oz (60 g) flour
  • 2 oz (60 g) breadcrumbs
  • 3 eggs
  • 1 lb (450 g) fresh pasta
  • Grated Canadian Parmesan or sharp Canadian Cheddar
  • Salt and freshly ground pepper

Preparation

Break eggs in a shallow bowl and beat with a little oil, salt and pepper. Place flour in a second bowl and breadcrumbs in a third.

If necessary, flatten cutlets between two sheets of plastic wrap. Place slices of Canadian Brie on cutlets and fold in two. Dip in flour, then eggs and finally in breadcrumbs.

Cook in oil and butter 5 minutes on each side.

Serve with fresh pasta, a slice of lemon and grated Canadian Parmesan or Sharp Canadian Cheddar.
