Young Camembert has a milky taste with sweet hints. As it matures, it forms the bloomy white rind and smooth interior that is typical to Camembert. To appreciate Camembert at its best, bring to room temperature 45 minutes to 1 hour before serving, so that the interior becomes soft without being runny.
Young Camembert cheeses will keep in the refrigerator for about 1 month. If the cheese is ripe and kept under good conditions, it will last for about 2 weeks.
Camembert cheeses are at their best when they emit an aroma of mushrooms and the rind gives when pressed slightly under your finger. A very strong smell or an ammonia-like odour is a sign that the cheese is overripe.
Proper storage includes making sure that the wrapping adheres well to the cheese to prevent it from drying out. Keep cheeses on a lower shelf of your refrigerator, far from foods with strong odours, to avoid absorption of unwanted tastes and smells.
