About this cheese
This semi-soft, washed-rind cheese is surface-ripened for over 6 weeks. It has a smooth rind that varies in colour from pale-pink to coppery-orange. The cheese is cream-coloured, dotted with small holes and has a smooth yet elastic texture. The milky, slightly acidic aroma brings to mind fresh mushrooms, and the flavours of milk and nuts intensify with age.

You can freeze Noyan cheese, in pieces of 500 g or less, for up to two months! Just carefully wrap cheese in plastic wrap and place in an airtight freezer bag or vacuum pack. Before using, it is important to allow cheese to thaw slowly in the refrigerator.
