The Fromagiers de la Table Ronde has been involved in cheese production for four generations. Their cheeses are made with organic milk from the herd of Holstein cows on the Raymond Alary and Sons family farm, where the fromagerie is also located. In the words of owner Ronald Alary, "the name Les Fromagiers de la Table Ronde is a proud reference to the Knights of the Round Table, because we make our decisions together, seated at a table." In fact, they even like to name their products with a medieval flair.
About this cheese
Aged for more than 60 days, this washed-rind farm cheese is made with pasteurized organic milk. It has a supple, melt-in-your-mouth interior, and the aromas of butter, peanuts, hay and a touch of farm goodness.

Most cheeses can be frozen, but it is important to keep in mind that freezing can affect texture and character. This is why thawed cheeses are best reserved for use in cooking. Neither the taste nor texture of meals cooked with previously frozen cheeses will be affected.
You can freeze Le Fou du Roy cheese, in pieces of 500 g or less, for up to two months! Just carefully wrap cheese in plastic wrap and place in an airtight freezer bag or vacuum pack. Before using, it is important to allow cheese to thaw slowly in the refrigerator.
