For their organic cheeses, the Fromagerie uses organic milk from farms near its home in Lac-Mégantic. These cheeses are certified by Québec Vrai, meaning they are made without pesticides, synthetic fertilizers, chemical additives or antibiotics.
This artisanal and handcrafted cheese was given the name of Le Paillasson in reference to the small mat or carpet of reeds on which it was placed to dry above the kitchen wood stove in the days of the island's ancestors.

Winner in the Swiss-type Cheese Category, and finalist in the Farmhouse Cheese Category, at the 2015 Canadian Cheese Grand Prix. The Louis D'Or was also grand winner of the prestigious CASEUS Longaevi prize at the 2014 Sélection CASEUS Competition, and winner of 3 awards at the 2014 Canadian Cheese Awards, including Best Quebec Cheese.
