Stuffed Avocados with Hazelnuts

2 ripe avocados
Juice of 1/2 lemon
Salt and pepper, to taste
2 oz (60 g) blanched and chopped hazelnuts
2 oz (60 g) Canadian Cheddar cheese, grated
2 oz (60 g) Canadian Parmesan cheese, grated
2 tbsp (30 mL) chopped fresh parsley
2 tomatoes, chopped
Bread crumbs
4 tsp (20 mL) melted butter
A pinch of paprika

Ingredients

2 ripe avocados
Juice of 1/2 lemon
Salt and pepper, to taste
2 oz (60 g) blanched and chopped hazelnuts
2 oz (60 g) Canadian Cheddar cheese, grated
2 oz (60 g) Canadian Parmesan cheese, grated
2 tbsp (30 mL) chopped fresh parsley
2 tomatoes, chopped
Bread crumbs
4 tsp (20 mL) melted butter
A pinch of paprika

Preparation

Preheat oven to 325 °F (160 °C).

Halve avocados lengthwise and pit. Gently scoop out flesh. Drizzle shells with lemon juice. Set aside.

Dice avocado flesh and place in bowl. Drizzle with lemon juice and season to taste with salt and pepper. Stir in nuts, Canadian Cheddar and Canadian Parmesan cheese, parsley and tomatoes. Fill avocado shells with mixture.

Sprinkle each stuffed avocado with bread crumbs and 1 tsp (5 mL) melted butter. Top with a pinch of paprika. Bake for 15 minutes. Remove from oven and serve immediately.
