Cream cheese does not go through the pressing stage of cheesemaking, which is common for fresh cheese.

Ingredients

1/2 cup (125 mL) tapioca pearls, your choice*
2 tbsp (30 mL) honey
1/3 cup (80 mL) Canadian Mascarpone
1 1/2 cups (375 mL) green tea or
black tea, infused and chilled
2 cups (500 mL) cranberry juince or
raspberry juice
1 cup (250 mL) Milk

Preparation

Cook tapioca in water according to package instructions, or until tender. Rinse under cold water, drain and reserve.

In a large bowl, mix honey and Mascarpone with a whisk. Gradually add tea, juice and milk.

Divide tapioca pearls and some ice cubes among tall glasses and top up with Mascarpone mixture.

Tips

Tapioca pearls come in a variety of flavours. Choose the variety you like and buy straws that are wide enough to allow the pearls to pass through so you can really enjoy your bubble tea.
