Exotic artichokes with Gouda
1/4 cup (60 mL) cooked rice
1/2 cup (125 mL) Canadian Gouda, shredded
1/3 cup (75 mL) red grapes, quartered
1 tbsp (15 mL) honey
1/4 cup (60 mL) chopped walnuts
1 tbsp (15 mL) fresh mint, chopped
1 tbsp (15 mL) fresh parsley, chopped
1 tbsp (15 mL) fresh dill, chopped
Salt and freshly ground pepper
2 cans (14 oz – 398 mL each) artichoke hearts, drained

Gouda cheese is nicely matched with a fruity, well-balanced Chardonnay and even beer.
In a bowl, mix all ingredients together except artichoke hearts. Season to taste.
Place artichoke hearts on a serving plate and top with mixture.
Serve immediately or refrigerate.
