Cinnamon apple butter grilled cheese

1/2 cup (125 mL) cinnamon apple butter, homemade or store-bought
8 slices multigrain bread
6 oz (180 g) Canadian firm cheese, sliced
1 apple, thinly sliced
8 slices cooked bacon
Butter at room temperature

Homemade cinnamon apple butter:
20 McIntosh apples, peeled and coarsely chopped
1/4 cup (60 mL) lemon juice
1/4 cup (60 mL) maple syrup or sugar
1/2 - 1 tsp (2-5 mL) cinnamon

Yields: 4 Servings

Ingredients

1/2 cup (125 mL) cinnamon apple butter, homemade or store-bought
8 slices multigrain bread
6 oz (180 g) Canadian firm cheese, sliced
1 apple, thinly sliced
8 slices cooked bacon
Butter at room temperature

Homemade cinnamon apple butter:
20 McIntosh apples, peeled and coarsely chopped
1/4 cup (60 mL) lemon juice
1/4 cup (60 mL) maple syrup or sugar
1/2 - 1 tsp (2-5 mL) cinnamon

Preparation

Spread cinnamon apple butter over slices of bread.

Divide cheese, apple and bacon among 4 slices of bread. Top with remaining slices.

Butter outside of sandwiches, and cook in a skillet on medium heat for 4–5 min on each side.

Cut grilled cheese in half and enjoy.

 

Homemade cinnamon apple butter

In a large saucepan, cook apples with lemon juice on medium-high for about 15 min or until apples are tender.

Using a hand blender, purée apples in the saucepan until smooth. Mix in maple syrup and cinnamon.

Cook on medium heat for 45 more min, stirring occasionally, to concentrate flavours and obtain a buttery texture.

Once cooled, transfer to jars and store in the refrigerator.

Tips

Cooking tip: When cooking a grilled cheese sandwich filled with other ingredients, cover the skillet with a lid or aluminum foil so the centre gets hot without burning the bread.

Cheese alternatives: Canadian Swiss cheese, Gouda, Aged Cheddar.
