Canadian Brie: Our top four festive favourites

Discover four ways you can bring more flavour to your holiday celebrations with creamy and delicious Canadian Brie.

Warm brie with dried cranberries

A whole Canadian Brie, 7–10 oz (200–300 g), + ¼ cup (60 ml) dried cranberries + ¼ cup (60 ml) halved pecans + 2 tbsp (30 ml) honey + 1 tbsp (15 ml) minced orange zest. Set Brie on an oven-safe dish. Mix other ingredients and arrange on top of Brie. Bake in a preheated oven at 400°F (200°C) for 7–10 minutes or until everything is warm and cheese begins to melt. Serve with a baguette.

Brie and Tapenade Tidbits

A whole Canadian Brie cut into wedges + fresh basil + cherry tomatoes + green or black olive tapenade. Serve Brie wedges upright (resting on the rind) garnished with a small leaf of fresh basil, a half-tomato speared into the Brie with an hors d’oeuvre pick and a dab of tapenade.

Brie, Mushroom and Rosemary Pastries

8 phyllo dough sheets brushed with 3 tbsp (45 ml) melted butter + 150 g (5 oz) sliced Canadian Brie + mushroom stuffing: 3 cups (750 ml) sliced mushrooms sautéed in butter with 1/3 cup (80 ml) white wine, salt and pepper to taste and 1 tsp (5 ml) fresh or dried rosemary. Bake in a preheated oven at 400°F (200oC) for 15 minutes.

Brie Stuffed with Apple and Chives

A whole Canadian Brie, 7–10 oz (200–300 g), cut in half horizontally + apple stuffing: Mix 1 tbsp (15 ml) butter + 1 cup (250 ml) finely diced apples + 1 tbsp (15 ml) fresh chopped chives + a pinch ground nutmeg + freshly ground pepper to taste. Lightly cook apple mixture before spreading onto Brie. Serve chilled.
