Ingredients

  • 1 lb (450 g) spinach leaves rinsed and coarsely chopped
  • 2 tbsp (30 mL) butter
  • 1 lb (450 g) scallops cut in half
  • 1 lb (450 g) large shrimp shelled and deveined
  • 1/3 cup (80 mL) white wine
  • Olive oil
  • Balsamic vinegar
  • Salt and pepper to taste
  • 1/3 cup (80 mL) chopped fresh dill

Preparation

Blanch spinach leaves in boiling water for 2 minutes. Strain. Line bottom of serving platter with spinach. Cover with clean cloth and set aside.

In skillet, sauté scallops and shrimp in butter for 2 to 3 minutes. Stir in white wine and cook for 2 minutes. Remove from heat and set aside. In microwave oven, heat spinach at maximum for 90 seconds.

Pour seafood mixture on spinach. Sprinkle with olive oil and balsamic vinegar. Season to taste with salt and pepper. Garnish with dill and serve immediately.
