Warm Pear Salad with Bénédictin Blue Cheese and Port Dressing

Ingredients

  • 4 pears
  • 2 tbsp (30 mL) nut oil
  • Salt and pepper to taste
  • 6 cups (1.5 L) mixed salad greens
  • Fresh Basil
  • Canadian Bénédictin Blue Cheese Stuffing
  • 3 oz (90 g) Canadian Bénédictin blue cheese
  • 3 oz (90 g) Canadian Cream cheese
  • Port Dressing
  • 1 tbsp (15 mL) honey
  • 2 tsp (10 mL) Xeres vinegar
  • 1/4 cup (60 mL) vegetable oil
  • 2 tbsp (30 mL) port
  • Salt and pepper to taste

Preparation

Peel pears and slice them in 2 lengthways. Remove cores with a melon scoop. Brush half-pears with nut oil, season with salt and pepper to taste. Place on preheated BBQ grill and sear on both sides. Remove and let cool.

Blend Canadian Bénédictin blue cheese and Canadian Cream Cheese together.

Mix dressing ingredients and set aside.

Stuff half-pears with cheeses and place on preheated BBQ grill. Close cover and warm pears 3 to 5 minutes over very low heat.

Toss salad greens with Port dressing. Arrange salad to look like little bushes in the middle of plates and set warm pears around them. Decorate each half-pear with a fresh basil leave.
