Vegetable and Cheddar Frittata

Preparation

What You Need

4 cups (1 l) frozen mixed vegetables*
6 eggs
1/2 tsp (2 ml) each salt and dried basil
Pepper, to taste
2 tbsp (30 ml) vegetable oil
1 medium onion, sliced
2 cloves garlic, minced
1 cup (250 ml) shredded Canadian Cheddar or
Swiss cheese

Instructions

In medium saucepan, bring 2 cups (500 mL) salted water to boil. Add frozen vegetables and cover. When water returns to boil, drain vegetables in a colander. Cut larger pieces of vegetable.

Beat together eggs, salt, basil and pepper until just blended. Heat oil in 10-inch (25 cm) non-stick skillet over medium heat. Add onion and garlic. Sauté until onion is tender, about 3 minutes. Add vegetables. Sauté until vegetables are hot.

Pour eggs over vegetables in skillet. Reduce heat to medium-low. Cover and cook until eggs are almost set. Sprinkle with cheese. Broil until Canadian Cheddar cheese melts, about 1 minute.


Tips

* To use fresh vegetables, blanch hard vegetables such as broccoli and carrot before sautéeing.

    Instead of using cream in a sauce use low fat plain yoghurt! The sauce is low in fat and calories, creamy and very good.
