Turkey Burger Melts

Preparation

What You Need

1 egg
2 tbsp (30 ml) Dijon mustard
1/2 tsp (2 ml) dried tarragon
1/4 tsp (1 ml) each salt
and pepper
1 lb (500 g) ground turkey or
chicken
1/4 cup (50 ml) chopped green onions
3 tbsp (45 ml) dry breadcrumbs
tbsp (15 ml) vegetable oil
1 cup (250 ml) shredded Canadian Swiss cheese
Lettuce and sliced tomatoes, to decorate

Instructions

In a large bowl, beat egg with mustard, tarragon, salt and pepper until blended. Add turkey, green onions and breadcrumbs. Mix well.

Shape mixture into 4 patties, about 1/2 inch (1.5 cm) thick. Heat oil in medium non-stick skillet over medium heat. Cook for 5 to 7 minutes on each side or until turkey is no longer pink. Remove from heat.

Top each patty with a slice of Canadian Swiss cheese. Cover and let rest until cheese is melted, about 2 minutes. Serve patties on toasted kaiser rolls. Garnish with lettuce and sliced tomato.
