Tomato and Feta Cheese Salad with Basil

Preparation

What You Need

Fresh watercress leaves, rinsed and patted dried
4 tomatoes, quartered
Pepper
3 oz (90 g) Canadian Feta cheese, crumbled
12 Greek olives, any variety

Basil Dressing:
1 tbsp (15 ml) wine vinegar
1/4 cup (50 ml) extra virgin olive oil
1/3 cup (75 ml) chopped fresh basil leaves
Pepper

Instructions

Arrange watercress leaves on serving plate. Top with tomato slices. Pepper to taste. Sprinkle with Basil Dressing and garnish with Canadian Feta cheese and olives. Serve immediately.

Basil Dressing:
In blender, process all ingredients until dressing is smooth. Pepper to taste.
