Tangerine and Red Onion Salad with Bocconcini

Preparation

What You Need

2 Boston lettuce, rinsed, patted dry and torn in pieces
1/2 red onion, sliced
12-16 small tangerine segments or
canned mandarine segments, cut in 2
4 oz (125 g) Canadian Bocconcini cheese, thinly sliced
Vegetable oil
Red wine vinegar
Salt
Pepper
Chopped fresh coriander

Instructions

Divide lettuce among 4 individual salad bowls. Add onion slices and tangerine segments. Top with Canadian Bocconcini cheese. Sprinkle with oil and red wine vinegar. Season to taste with salt and pepper and garnish with fresh coriander. Serve immediately.
