Preparation

What You Need

1 egg
1/4 cup (60 ml) Canadian Cheddar or
Tex-Mex blend, grated
1/2 cup (125 ml) combination of red or green bell pepper
1/2 cup (125 ml) finely chopped onion
2 tsp (10 ml) salsa
1 large soft whole wheat tortilla

Instructions

Stir all ingredients together in a bowl. Spoon mixture along center of tortilla. Roll, or fold sides over center. Place filled tortilla on a microwave safe plate. Cook on high about 1 to 1 1/2 minute—until egg is cooked and cheese is melted.

Let cool a bit before eating.
