Stuffed Mushrooms (2)

Preparation

What You Need

1/2 cup (125 ml) grated Canadian Parmesan cheese
1 lb (500 g) choice of ground meat
1/4 cup (50 ml) roasted pine nuts
1/2 cup (125 ml) chopped fresh parsley
1/2 cup (125 ml) chopped green onions
1 tbsp (15 ml) minced garlic
2 tbsp (30 ml) Dijon mustard
1 lb (500 g) mushroom caps

Instructions

Preheat oven to 350 °F (180 °C).

In large bowl, mix Canadian Parmesan cheese with all ingredients, except mushroom caps. Mix well. Shape mixture into small balls (small enough to fit into mushroom caps). Soak hands frequently in water, to prevent sticking.

Stuff each mushroom cap with a meat ball and place in buttered baking pan. Bake for 25 minutes. Remove from oven and let cool for 10 minutes before serving.
