Spring Frittata with Asparagus and Bacon

Ingredients

  • 1 pkg 14 oz (425 g) President's Choice Rustic White Bread à l'européenne
  • 1 bunch of approximately 12 asparagus woody ends trimmed
  • 7 slices President's Choice Fully Cooked Bacon chopped (1/2 65 g pkg)
  • 4 eggs
  • 1 1/2 cups (375 mL) Milk
  • 1 cup (250 mL) 15 % or 18 % table cream
  • 1 1/2 cups (375 mL) President's Choice Canadian White Cheddar cheese Aged One Year, shredded
  • Salt and pepper to taste
  • Cherry tomatoes optional

Preparation

Preheat oven to 350 °F (180 °C). Cut bread into 1/2 inch (1.5 cm) cubes. Cut asparagus into 1 inch (2.5 cm) pieces. In large bowl, stir together bread cubes, asparagus and bacon.

In another bowl, whisk together eggs, milk, cream, and 1 cup (250 mL) Canadian cheddar. Season with salt and pepper. Pour over bread mixture, tossing to coat well.

Pour mixture into 8 inch (20 cm) square buttered baking dish. Sprinkle top with 1/2 cup (125 mL) Canadian cheddar. Bake in centre of oven until golden, 40 to 45 minutes. Garnish with cherry tomatoes, if desired, and serve.
