Speedy Oven Meatballs

Preheat oven to 500 °F (260 °C).
In large bowl, combine beef, bread crumbs, soup mix and milk; shape mixture into 32 balls. Place in single layer in large foil-lined shallow baking pan.
Bake 8 minutes or until cooked; drain. Add meatballs to one of the following sauces and serve with hot cooked rice or noodles.
Curry Sauce:
In medium saucepan, melt 2 tbsp (30 mL) butter. Blend in 2 tbsp (30 mL) flour, 1 tsp (5 mL) curry powder and pinch ground ginger.
Gradually stir in 3/4 cup (175 mL) light cream and 1/2 cup (125 mL) beef consommé. Cook and stir over medium heat until mixture boils and thickens.
Makes about 1 1/2 cups (375 mL)

Cheese Sauce:
In medium saucepan, melt 2 tbsp (30 mL) butter. Blend in 2 tbsp (30 mL) flour and 3/4 tsp (3 mL) dry mustard.
Gradually stir in 1 1/4 cups (300 mL) milk. Cook and stir over medium heat until mixture boils and thickens. Remove from heat; cool slightly. Add 1 1/2 cups (375 mL) shredded Canadian Cheddar cheese and stir until cheese is melted.
Makes about 1 1/2 cups (375 mL)

Mushroom Sauce:
In medium saucepan, combine 1 can (10 oz/284 mL) cream of mushroom soup and 2/3 cup (150 mL) milk. Add 1 can (10 oz/284 mL) drained, sliced mushrooms. Cook and stir over medium heat until hot.
Makes about 2 1/2 cups (625 mL)

Tips
To quickly shape uniform meatballs, place meat mixture on cutting board; pat evenly into large square, 1 inch (2.5 cm) thick. With sharp knife, cut meat into 32 squares; shape each square into a ball with wet hands.
