With mixer, beat eggs, milk, melted butter, sugar and vanilla extract. Add flour and mix well. Refrigerate batter for 30 minutes.
Lightly butter an 8 inch (20 cm) nonstick skillet. Cook crêpes (3,4 minutes on each side) using 3 tbsp (45 mL) of batter at a time. Separate crêpes with wax paper.
Spread about 2 tbsp (30 mL) of filling on each crêpe. Place 1 row of fruit at one end of crêpe and roll. Garnish with berry coulis if you want.
Filling
In blender or with electric mixer, mix all ingredients well.
