Shrimp and Avocado Canapés with Feta

Feta Guacamole
In a bowl, mash an avocado with a fork. Add about 1/4 cup (60 mL) crumbled Canadian Feta, a crushed clove of garlic and chopped green onion. Add lime zest, lime juice, Tabasco and salt and pepper to taste.
Place a spoonful of guacamole made with Canadian Feta in scoop-shaped corn chips. Top each one with a tiny cooked shrimp, diced tomato, mango and Feta. Sprinkle with fresh chopped coriander.
Serve immediately.
Tips
For a change of taste, try plain or flavoured Canadian Havarti, Gouda or Medium Cheddar.
