Seasoned Mozzarella in Breadcrumbs

This is the Seasoned Mozzarella in Breadcrumbs recipe.

Ingredients

  • 1/2 cup (125 mL) capers finely chopped
  • 1/2 cup (125 mL) sun-dried tomato pesto
  • 12 slices of sandwich bread
  • 6 oz (180 g) Canadian Mozzarella or Canadian Mild Provolone in 1/4 inch (0.5 cm) slices
  • 2 tbsp (30 mL) butter
  • 2 tbsp (30 mL) extra virgin olive oil
  • 2 eggs
  • 2 tbsp (30 mL) Milk
  • 1/4 cup (60 mL) all-purpose flour
  • Salt and pepper to taste

Preparation

Mix together capers and pesto and season. Spread bread slices with this mixture. Place Mozzarella slices on six of the bread slices, then top with remaining bread slices to form sandwiches. Cut off crusts.

Heat butter and oil in a frying pan over a medium high heat.

In a bowl, mix together eggs and milk.

Dip sandwiches in flour, then in egg mixture, then sauté them in pan for 3,4 min minutes on each side or until golden.

Drain on kitchen paper and cut into four. Serve hot.
