Scrambled Eggs with Cheese

Preparation

What You Need

8 eggs
1/2 cup (125 ml) milk
Salt
Pepper, to taste
1 cup (250 ml) shredded Old Canadian Cheddar, Swiss or
Monterey Jack cheese
1/2 cup (125 ml) diced cooked ham (optional)
1 tbsp (15 ml) butter
1 green onion, chopped

Instructions

Beat together eggs, milk, salt and pepper. Stir in cheese and ham.

Heat medium non-stick skillet over medium-high heat. Add butter and green onion. Sauté a few seconds.

Pour in egg mixture and immediately reduce heat to medium-low. As mixture begins to set, gently move spatula across bottom and sides of skillet to form large, soft curds. Cook until eggs are thickened and no visible liquid egg remains, but they are still moist.


Tips

Microwave:

For one serving, pour one quarter of the mixture into a small microwaveable bowl. Cover with plastic wrap, venting one corner. Microwave on 'mediun-high' for about 1 1/2 minutes, stirring several times during cooking. Let stand 1 minute before serving.
