Scandinavian Pea Soup

The Vikings were the first Europeans to discover Canada, so it seems fitting that they lead off the year. Like Canadians, the Scandinavians take advantage of their cold climate and are enthusiastic skiers, skaters, and of course, hockey players.

This hearty soup is almost a meal in itself and is an excellent way to warm up after a winter work-out.

  • Yields 8 to 10 servings

Preparation

What You Need

1 1/2 cups (375 ml) yellow split peas
4 1/2 cups (1.125 l) water
1 tsp (5 ml) salt
4 cups (1 l) chopped cooked ham , (approx. 1 lb/ 500 g)
1/2 cup (125 ml) chopped onion
1/2 cup (125 ml) grated carrot
2 cups (500 ml) milk
Cayenne, nutmeg

Instructions

Wash peas; drain. Add water and salt to peas. Bring to the boil and boil 2 min. Remove from heat. Cover and let stand 1 hour. Do not drain water.

Add ham, onion and carrots to peas. Cover and simmer about 1-1/2 hours or until peas are tender. Stir in milk, cayenne and nutmeg to taste. Heat through and serve.
