What You Need
A variation on an old Swiss recipe, here's a classic that will likely become a wintertime favourite.
2 lb (1 kg) baking potatoes, thinly sliced, divided (about 6 cups/1.5 L)
1 large onion, finely chopped, divided
6 oz (170 g) thinly sliced cooked ham
1-1/4 cups (300 mL) chicken broth
2 tbsp (30 mL) all-purpose flour
2 cups (500 mL) shredded Canadian Havarti cheese
Instructions
Layer half the potato slices and half the onion in a 2-quart (2 L) shallow rectangular baking dish. Sprinkle with salt and pepper.
Arrange ham slices evenly over potatoes. Top with a second layer of potatoes and onions. Sprinkle with salt and pepper. Smoothly combine chicken broth and flour. Cook and stir over medium-high heat until mixture boils and thickens. Pour over the potatoes and ham in baking dish. Sprinkle Canadian Havarti cheese evenly over surface.
Bake, uncovered, in 375 °F (190 °C) oven for 60 to 70 minutes or until the potatoes are tender and cheese is browned. Let stand for 5 minutes before cutting and serving.
