Potato and Cheddar Cheese Soup

Preparation

What You Need

2 tbsp (30 ml) butter
1 onion, chopped
2 cloves garlic, finely chopped
5 medium potatoes, peeled and diced
2 cups (500 ml) chicken stock or
water
1/4 tsp (1 ml) dried thyme
1/2 tsp (2 ml) pepper or more to taste
2 cups (500 ml) milk
Salt, to taste
1 cup (250 ml) grated Cheddar cheese
2 tbsp (30 ml) chopped fresh parsley

Instructions

Melt butter in a Dutch oven or large saucepan. Sauté onion and garlic. Cook, without browning 3 to 4 min. Add potatoes, chicken stock, thyme and pepper. Bring to a boil. Reduce heat. Cook, covered, 20 min or until potatoes are very tender.

Purée half of soup mixture. Return to the remaining soup in the pot. Add milk. Heat thoroughly. Season to taste with salt and pepper. Stir in cheese. Cook gently just until cheese melts.

Serve sprinkled with parsley.


Tips

For a creamy texture when making soups, use baking potatoes.

Microwave Method : In a 3 qt (3 L) microwave safe casserole, cook butter with onion and garlic, uncovered, on High (100% power), for 2 to 3 min. Add potatoes, stock and seasonings. Cook, covered, on High, 15 to 18 min, until potatoes are tender. Purée half the mixture. Return to remaining soup in casserole. Stir in milk. Cook, uncovered, on High 2 to 4 min until heated thoroughly. Stir in cheese. Season to taste.

Note : Recipe tested in a 700 watt microwave oven.
