Pork Chops with Apples and Raisins

Preparation

What You Need

Butter
6 loin pork chops, (1/2 inch/ 12 mm thick)
1/2 cup (125 ml) frozen apple juice concentrate, thawed
1/4 cup (60 ml) water
1 tsp (5 ml) beef bouillon mix
1/2 cup (125 ml) finely-chopped onion
1 clove garlic, minced
1/2 tsp (2 ml) ground thyme
2 large apples, cored
1/4 cup (60 ml) raisins
1 1/3 cups (330 ml) milk
3 tbsp (45 ml) flour
Salt
Pepper, to taste

Instructions

Melt small amount of butter in large frypan. Brown chops on both sides; add more butter to pan as needed.

Combine apples juice concentrate, water and bouillon mix; pour over chops. Sprinkle with onion, garlic and thyme. Cup apples crosswise into 1/2 inch (12 mm) slices; arrange on meat. Sprinkle raisins over all. Bring to a boil. Reduce heat, cover and simmer 25 min or until chops are tender.

Remove chops and apples to heated platter; keep warm. Combine milk and flour until smooth. Stir into pan juices. Cook and stir over medium heat until mixture comes to a boil and thickens. Add salt and pepper to taste.

To serve pour sauce over chops and apples.


Tips

Microwave Method: Combine 2 tbsp (30 mL) butter, onion and garlic in 2-qt/ 2 L shallow glass baking dish. Cover with vented plastic wrap. Cook on HIGH (100 %) 2 to 3 minutes. Add bouillon mix, thyme and apples juice concentrate. Omit water. Arrange pork chops over onions with meaty portions toward outside of dish; top with apples slices and raisins. Re-cover. Cook on MEDIUM (50 %) 30 min or until meat next to the bone is no longer pink; turn chops over halfway through cooking time. Remove meat and apples from dish; cover and keep warm. Combine milk and flour until smooth. Stir into liquid in dish. Cook on HIGH (100 %) 8 to 10 min or until mixture boils and thickens; stir 4 times. Complete as above.

Tested in 700 watt oven.
