Pasta with Italian Sausage and Cheese Sauce

Preparation

What You Need

2 tbsp (30 ml) butter
1/2 cup (125 ml) chopped onion
2 tbsp (30 ml) flour
2 cups (500 ml) milk
1 1/2 cups (375 ml) shredded Canadian Provolone or
old Cheddar cheese
8 oz (240 g) hot Italian sausage or
sweet, cooked, sliced
2 tbsp (30 ml) tomato paste
1 tbsp (15 ml) chopped fresh parsley
Hot cooked penne or
similar shaped pasta
Crushed chillies (optional)

Instructions

Melt butter in medium saucepan; sauté onion until tender. Blend in flour. Gradually stir in milk. Cook and stir over medium heat until mixture boils and thickens. Remove from heat.

Add cheese; stir until melted. Stir in sausage, tomato paste and parsley. Reheat if necessary; do not boil. Serve sauce over hot cooked pasta. Garnish with crushed chillies if desired.


Tips

Microwave Method: Combine butter and onion in 2 1/2-qt (2.5 L) microwave-safe bowl. Cover with vented plastic wrap. Microwave at High (100 %) 2 to 3 min or until onion is tender. Blend in flour. Gradually stir in milk. Microwave, uncovered, at High (100 %) 4 to 5 min or until mixture boils and thickens, stirring at least once during cooking. Continue with step 3 above.

Note: Recipe tested in 700 watt microwave oven.
