Pasta with Cheese Trio

Ingredients

  • 1 lb (450 g) linguini or other pasta
  • 1 can (5 1/2 oz/156 mL) herb flavoured tomato paste
  • 1 cup (250 mL) 35 % cream or 15 % or 18 % table cream
  • 1 tsp (5 mL) Tabasco sauce
  • 8 oz (250 g) herb flavoured Canadian Cream cheese dip style
  • 1 garlic clove chopped finely
  • 1 tbsp (15 mL) dried oregano
  • 2 tbsp (30 mL) fresh basil chopped finely
  • 1 tsp (5 mL) dried sage
  • 1/2 cup (125 mL) Canadian Swiss cheese grated
  • 2 tbsp (30 mL) olive oil
  • 1/2 cup (125 mL) Canadian Parmesan cheese grated
  • Fresh basil or sage leaves

Preparation

In large saucepan, cook spaghetti according to package directions, until al dente.

While pasta is cooking, prepare sauce. In a saucepan, over low heat, mix tomato paste, cream, Tabasco sauce and Canadian Cream cheese. Allow to simmer 2 to 3 minutes at the most.

Add garlic, herbs, and, at the last moment, grated Canadian Swiss cheese. Set aside and keep warm. Drain pasta and pour into a large serving bowl. Drizzle with olive oil and sprinkle with Canadian Parmesan cheese. Pour warm sauce over pasta, mix thoroughly and serve each plate garnished with one or two basil or sage leaves.
