Orange Chocolate Refrigerator Cake

This recipe is taken from the 2000 Milk Calendar. A cake you don't bake. A favourite recipe with subtle new flavours and lightened-up. It's great to make-ahead.

Ingredients

  • 1 1/2 cups (375 mL) orange yogurt or vanilla yogurt
  • 2 tbsp (30 mL) sugar
  • Grated rind of 1 1/2 oranges
  • 3/4 cup (180 mL) 35 % cream whipped
  • 40 round chocolate wafers
  • 2 oranges sectioned or 1 can 10 oz (284 mL) mandarin oranges

Preparation

Using yogurt strainer or fine sieve lined with paper towel or cheesecloth set over bowl. Drain yogurt until reduced to 1 cup (250 mL); about 1 hour. Discard liquid.

In medium bowl, mix together drained yogurt, sugar and orange rind. Fold in whipped cream. Measure out about 3/4 cup (180 mL) for frosting and refrigerate.

Sandwich wafers together with spoonfuls of remaining cream mixture to create log. Gently frost with reserved cream mixture, covering completely. Loosely cover log with plastic wrap, using toothpicks to support wrap. Refrigerate for 4 hours.

To serve, slice cake on the diagonal and garnish with orange sections.
