Instructions
Using yogurt strainer or fine sieve lined with paper towel or cheesecloth set over bowl. Drain yogurt until reduced to 1 cup (250 mL); about 1 hour. Discard liquid.
In medium bowl, mix together drained yogurt, sugar and orange rind. Fold in whipped whipping cream. Measure out about 3/4 cup (180 mL) for frosting and refrigerate.
Sandwich wafers together with spoonfuls of remaining cream mixture to create log. Gently frost with reserved cream mixture, covering completely. Loosely cover log with plastic wrap, using toothpicks to support wrap. Refrigerate for 4 hours.
To serve, slice cake on the diagonal and garnish with orange sections.

Don't frost the outside until ready to serve. Wrap the log in plastic wrap and refrigerate for no more than 4 hours. Easy on the filling too. Low fat sugar free yoghourt does not drain off well and will make your cake a soggy mess. You could make individual parfaits instead if you want it really soft.
