New Year's Banana Bread

Preparation

What You Need

1/2 cup (125 ml) softened butter
2/3 cup (150 ml) sugar
1 egg
1 tsp (5 ml) vanilla extract
1 1/3 cup (325 ml) mashed ripe bananas
1/2 cup (125 ml) sour cream
1 3/4 cups (425 ml) all-purpose flour
1 tsp (5 ml) baking powder
1 tsp (5 ml) baking soda
Salt
1 cup (250 ml) chopped nuts

Instructions

Preheat oven to 350 °F (180 °C).

In large bowl, cream butter with sugar. Beat in egg and vanilla. Add bananas and sour cream. Mix well.

In separate bowl, combine flour, baking powder and baking soda. Transfer content into first bowl and mix together. Stir in nuts.

Pour mixture into buttered loaf pan and bake for 45 to 50 minutes or until toothpick inserted in centre comes out clean. Slice and serve hot or cold.
