Nests with Ham, Eggs and Swiss Cheese

Preparation

What You Need

12 slices of milk bread
1/3 cup (80 ml) butter, melted
2/3 cup (160 ml) minced ham
6 oz (180 g) shredded Canadian Swiss
1/4 cup (60 ml) finely chopped green onions
12 medium eggs
Salt
Pepper, to taste
2 oz (60 g) shredded Canadian Swiss

Instructions

Remove crusts from sliced bread. Flatten slices with a rolling pin. Brush both sides with melted butter and press a slice into each of 12 6 oz (180 mL) ovenproof ramekins or custard cups.

Set them on a cookie sheet and bake at 350 °F (180 °C) for 12 minutes. Divide ham, 6 oz (180 g) cheese and green onion evenly among the ramekins.

Make a well in centre of each 'nest' and delicately break an egg into it. Salt and pepper, and top with 2 oz (60 g) cheese, divided evenly among nests.

Bake for 18 minutes or until eggs are done to taste.


Tips

For a change of taste, use Canadian Cheddar or Monterey Jack.
