Mashed Sweet Potatoes with Cheese

This side dish is easy to make and sure to please the whole family.

Ingredients

11 oz (330 g) sweet potatoes, (approximately 1 large)
1/4 cup (60 mL) Milk
1 tbsp (15 mL) butter
Salt and pepper, to taste
1/4 tsp (1 mL) dried thyme
1 cup (250 mL) Canadian Cheddar cheese, grated

Preparation

Peel and cut sweet potatoes into pieces. Boil in same way as regular potatoes and cook for about 10 minutes.

Once cooked, strain and mash potatoes with milk and butter. Season and add half the cheese. Transfer to a greased baking dish. Sprinkle remaining cheese and broil until it is golden brown.
