Ingredients: Pink Lemonade Cream; 1/2 cup (125 mL) frozen pink lemonade concentrate thawed; 1 1/2 tsp (7 mL) corn starch; 1/2 cup (125 mL) whipping cream 35 %; Sassy Daiquiri Cream; 1 egg beaten; 1/3 cup (80 mL) sugar; 1/2 tsp (2 mL) grated lime rind; 1/4 cup (60 mL) lime juice; 2 tbsp (30 mL) butter; 1/2 cup (125 mL) whipping cream 35 %

Ingredients

Pink Lemonade Cream
1/2 cup (125 mL) frozen pink lemonade concentrate thawed
1 1/2 tsp (7 mL) corn starch
1/2 cup (125 mL) whipping cream 35 %
Sassy Daiquiri Cream
1 egg beaten
1/3 cup (80 mL) sugar
1/2 tsp (2 mL) grated lime rind
1/4 cup (60 mL) lime juice
2 tbsp (30 mL) butter
1/2 cup (125 mL) whipping cream 35 %

Preparation

Pink Lemonade Cream:

Combine lemonade concentrate and corn starch. Stir over medium-high heat until mixture comes to a boil and thickens. Cool. Whip cream until thick. Fold lemonade mixture into whipped cream.

Makes 1 1/2 cups (375 mL).

Sassy Daiquiri Cream:

Combine egg, sugar, lime rind, lime juice and butter. Stir over low heat until smoothly thickened. Cool. Whip cream until thick. Fold in lime mixture. Tint a pale green, if desired.

Makes 1 2/3 cups (410 mL).
