Ingredients

  • 3 tbsp (45 mL) olive oil
  • 2 tbsp (30 mL) balsamic vinegar
  • 1 tsp (5 mL) chopped fresh basil
  • 4 eggs
  • 30 green beans
  • 12 snow peas
  • 1 green bell pepper sliced
  • 1 tomato diced
  • 1 cooked potato cubes
  • 1 lb (450 g) cooked ham cubed
  • 3 tbsp (45 mL) Canadian Cheddar cubed or cut into strips
  • Salt and pepper to taste
  • 2 tbsp (30 mL) chopped fresh chives

Preparation

In a salad bowl, mix together oil, balsamic vinegar and basil.

Add salt and vinegar to water and boil eggs for 10 minutes. Shell eggs and set aside.

Blanch beans and snow peas and rinse under cold water or use them uncooked. Mix together vegetables, ham and Canadian Cheddar cheese; add vinaigrette. Garnish salad with halved eggs, season to taste with salt and pepper, then sprinkle with chives.
