Golden Turkey and Cranberry Barquettes

What You Need


Barquettes:
1 1/2 loaves unsliced sandwich bread
2 tbsp (30 ml) President's Choice Normandy Style butter, melted
Salt
Pepper, to taste

Turkey Sauce:
1/4 cup (60 ml) President's Choice Normandy Style butter
2 onions, chopped
4 celery stalks, chopped, about 4 cups (1 L)
1/3 cup (80 ml) all-purpose flour
2 cups (500 ml) President's Choice Organic Condensed Chicken Broth, non diluted
2 cups (500 ml) milk
4 cups (1 l) cooked turkey, cubed
1/2 cup (125 ml) dried cranberries
1 tbsp (30 ml) dried sage
2 tbsp (30 ml) freshly chopped parsley
Salt
Pepper, to taste

Instructions

Barquettes:
Preheat oven to 375 °F (190 °C).

Remove crust and cut bread into 2 inch (5 cm) slices. Scoop out part of the centre of each slice to form bread barquettes. Butter all 4 sides and top of each bread slices and bake in oven until golden, 10 to 15 minutes. Set aside.

Turkey Sauce:
In saucepan, melt butter over medium heat and cook onions and celery until softened, 3 to 4 minutes. Stir in flour and cook for 2 minutes, stirring. Remove from heat. Gradually whisk in chicken broth until smooth. Return to medium heat. Whisk in milk. Cook until thickened, stirring constantly, about 3 to 4 minutes. Stir in turkey, cranberries, sage and parsley. Season with salt and pepper.

Top each bread barquette with hot Turkey sauce.
