Golden Turkey and Cranberry Barquettes

Barquettes:
Preheat oven to 375 °F (190 °C).
Remove crust and cut bread into 2 inch (5 cm) slices. Scoop out part of the centre of each slice to form bread barquettes. Butter all 4 sides and top of each bread slices and bake in oven until golden, 10 to 15 minutes. Set aside.
Turkey Sauce:
In saucepan, melt butter over medium heat and cook onions and celery until softened, 3 to 4 minutes. Stir in flour and cook for 2 minutes, stirring. Remove from heat. Gradually whisk in chicken broth until smooth. Return to medium heat. Whisk in milk. Cook until thickened, stirring constantly, about 3 to 4 minutes. Stir in turkey, cranberries, sage and parsley. Season with salt and pepper.
Top each bread barquette with hot Turkey sauce.
