Golden Turkey and Cranberry Barquettes

Ingredients

  • Barquettes
  • 1 1/2 loaves unsliced sandwich bread
  • 2 tbsp (30 mL) President's Choice Normandy Style butter melted
  • Salt and pepper to taste
  • Turkey Sauce
  • 1/4 cup (60 mL) President's Choice Normandy Style butter
  • 2 onions chopped
  • 4 celery stalks chopped, about 4 cups (1 L)
  • 1/3 cup (80 mL) all-purpose flour
  • 2 cups (500 mL) President's Choice Organic Condensed Chicken Broth non diluted
  • 2 cups (500 mL) Milk
  • 4 cups (1 L) cooked turkey cubed
  • 1/2 cup (125 mL) dried cranberries
  • 1 tbsp (30 mL) dried sage
  • 2 tbsp (30 mL) chopped fresh parsley
  • Salt and pepper to taste

Preparation

Barquettes:

Preheat oven to 375 °F (190 °C).

Remove crust and cut bread into 2 inch (5 cm) slices. Scoop out part of the centre of each slice to form bread barquettes. Butter all 4 sides and top of each bread slices and bake in oven until golden, 10 to 15 minutes. Set aside.

Turkey Sauce:

In saucepan, melt butter over medium heat and cook onions and celery until softened, 3 to 4 minutes. Stir in flour and cook for 2 minutes, stirring. Remove from heat. Gradually whisk in chicken broth until smooth. Return to medium heat. Whisk in milk. Cook until thickened, stirring constantly, about 3 to 4 minutes. Stir in turkey, cranberries, sage and parsley. Season with salt and pepper.

Top each bread barquette with hot Turkey sauce.
