Frozen Toasted Rice Square
Here is a frozen version of a favourite kids’ snack.

Line a 20 cm (8 inches) square pan with parchment paper or plastic wrap and set aside.
Melt butter in a large saucepan over medium heat, add marshmallows and melt gently for 30 seconds (marshmallows must not be all melted). Remove from heat and add 4 cups of cereal. Mix well and cool.
Soften ice cream using a mixer; add cereal mixture in small quantities at a time. Pour into pan and sprinkle with remaining cereal. Freeze for 3 hours.
Remove from pan using parchment paper and cut into square. Serve immediately or store in freezer.
Note: Using a knife dipped in hot water will cut perfect squares.
