Curry Coconut Steaks

Ingredients

  • 3 tbsp (45 mL) butter
  • 4 pork steaks cut from loin or leg, about 1 inch (2 cm) thick
  • Salt and pepper to taste
  • 1 onion thinly sliced
  • 1 garlic clove finely chopped
  • 1 green bell pepper cubed
  • 1/2 red bell pepper julienned
  • 2 celery stalks diced
  • 1 cup (250 mL) chicken broth
  • 2 tbsp (30 mL) curry powder
  • 2 zucchini cut into pieces or baby squash quartered
  • 1/4 cup (60 mL) coconut milk or 35 % cream

Preparation

Heat oil in pan, season steaks with salt and pepper and cook for 2 to 3 minutes on each side; remove steaks and set aside.

In the same pan, sauté onion, garlic, green and red pepper and celery. Add chicken broth, then curry powder.

Cook for 3 to 4 minutes over low heat. Add steaks and mix. Add zucchini or baby squash. Cook for 3 more minutes and set aside. Add coconut milk or cream, season with salt and pepper. Serve with vegetables.

Tips

*If using cream, simmer the sauce very slowly. Be careful not to overcook zucchini or baby squash. If using coconut milk, do not let it boil.
